sweet pots

It's been a little while since I've hung out over here at the blog... no particular reason.... but do feel like I could hibernate for the winter.
Bert is on lots of different work shifts as it's coming up to Christmas, so he's working hard and pretty sleepy, and by the time he gets home he's just ready for an episode of Kojak, a snack and bed. Who loves ya baby?
We are both fans of Sweet potatoes, we like them just baked in the oven with a bit of vegan butter, or cut up and roasted with lots of other veggies, or in soups too. 
The ones in the photo above (which is a bit of a funny photo. hmm) are just sliced up and roasted in the oven. I like to cover them with some nutritional yeast flakes, smoked paprika and salt and pepper and then drizzle with olive oil. On these ones, for the last couple of minutes I also added some spring onions, chili and some ground flaxseed, sunflower and pumpkin seed (I buy it ready milled).
They are a nice little post work snack and kinda healthy too.x

  1. Sounds delicious. I love sweet potatoes, too and always add them to lentil stew and chili.
